Wild Berry Compote French Toast: Three slices of graham-cracker crusted challah French Toast, wild berry compote, vanilla custard, whipped cream (option for lactose incompetent people: remove the custard and cream, add excessive amounts of fresh berries).

This is breakfast perfection from Portage Bay in Seattle.

Portage Bay’s slogan is “Eat like you give a damn.” About where your food comes from and how it was handled. About what you put in your body. About environmental sustainability. This completely organic cafe accommodates any and all food preferences while encouraging local and sustainably-grown food consumption. They make a statement. A very tasty statement.

In Seattle, cafes like Portage Bay are not unique. Most restaurants have vegan and gluten-free options. Most stores use recycled bags. Most people like the mountains, wear rain coats instead of using umbrellas, and are willing to pay a little more to ensure that their purchase was produced in a fair and sustainable way. It’s a bit hippie, sure, but people actually seem to care enough about their environment to do something about it. In the face of a growing environmental problem worldwide, we need more people like this. People who care.
